Zucchini Noodles with Marinara Sauce For Your Perfect (And Healthy) Italian Evening

This light and refreshing zucchini noodle dish is a great alternative to traditional pasta. Tossed with a flavorful marinara sauce, it’s healthy and quick to make. Serves two.

Table of Contents

Ingredients:

  • 2 medium zucchinis (spiralized into noodles)
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Fresh basil, torn (for garnish)
  • Salt and pepper, to taste

Preparation:

  1. Prepare the zucchini noodles: If you haven’t already, spiralize the zucchinis to create your noodles. If you don’t have a spiralizer, a vegetable peeler can also create thin strips.
  2. Sauté garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  3. Cook the zucchini noodles: Add the spiralized zucchini noodles to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes until they start to soften. Zucchini cooks quickly, so keep an eye on it to avoid mushiness!
  4. Add the marinara sauce: Pour the marinara sauce over the zucchini noodles and stir to combine. Let it cook for another minute to heat through. If you like a bit of spice, feel free to add some red pepper flakes at this stage!
  5. Serve: Divide the zucchini noodles between two plates and garnish with torn basil. This dish is best served immediately, showcasing the freshness of the zucchini and the richness of the marinara.
